Thanks guys! It really was the best to see everything all come together. It made me especially nervous to not be able to predict what the stuffing would taste like after it cooked inside the turkey. I already have ideas for next year!!

For the stuffing I softened onions and celery with a ton of butter in a pan until they got clear, and then I added fresh thyme and sage, salt and lots of pepper, and dried savory. I melted some more butter in with it and tossed it with the breadcrumbs. I put it in the turkey just like that, but or the stuff in the crock pot I added 2 cups of chicken stock.

I wish I had added garlic! Apples, not so much. My mom had ruined stuffing for me for years by putting loads of nuts and cranberries and raisins. I like savory stuffing!

I made the Zuppa Toscana they serve at Olive Garden but mine is like 1000 times better.

Anyone already on my facebook already knows this, but I'm attempting to make my own pastrami right now. I got a big slab of brisket that I cured in a brine made with my own pickling spices for 12 days, thus turning it into corned beef. I cut off a chunk and made this: And made some french onion soup to go with it that looked like this: Soup was really easy to make and tasted so damn good. Sautee some thinly sliced onions in a 1/4 cup of butter on a med-low heat until they're caramelized and extremely soft. Add a table spoon of flour and then stir until incorperated. Then add 2ish cups of red wine, 4ish cups of beef stock and some fresh thyme. Bring it to a boil and then reduce to a simmer. Let it simmer for 15 mins or so. Add salt and pepper, or more red wine/stock to taste. Scoop it in an oven safe bowl, top it with a couple slices of grueryre cheese and then cover it with some store bought puff pastry. Throw it in the oven at 400 for 20 mins or so. Looks super swanky, but doesn't take much effort or time to make. Pastrami pictures to follow. It's smoking right now and will be done in 8ish hours.

Speaking of soup, my newest favorite local business to support. www.soupcycle.com/For those who don't like clicking links, I'll briefly explain. This is basically a "soup of the week" club. You sign up, pick which soup you want (vegan, veggie, meat), and they deliver a quart of that soup to you door once a week. Every week, they send you the following week's soup choices, so you can choose which soup you want. For example, I picked the meat soup, so they deliver a different meat soup every week. If I want to get the veggie instead, or both the veggie and meat, I log into my account and change my order. They default to your last order if you do nothing, and because I like meat, I do nothing to get their meat soup every week. If you are going on vacation, you log in and say, "skip me next week, I won't be in town." Plus, they deliver the soup via bicycle, and all of their ingredients are hippie friendly, so it's good for the environment and shit. You only wish you had this in Canadia.
