Wow, I can't believe someone made those pepper egg flower thingies work! I always see total fails, kudos to your lady! So, I'm super lucky that every year I ask what fancy dinner the boy wants for his birthday, and every year he says CHILI!!!!!! This year I threw a bunch in a dutch oven and baked cornbread on top of it and oh gosh it was so good!

It was pretty g-d delicious. The cornbread soaked up a lot of the moisture and became a giant cornbread monster in the dish so I'm glad I only put about a third of my original pot of chili in there, but damn if it didn't make that cornbread the tastiest, moistestest cornbread ever.

That looks delicious! I made some crockpot chili the other day since my mom gave me all of these cans of beans and tomatoes and I wanted to use some of them. g 1 can garbanzo beans - drained and rinsed very well 1 can red kidney beans - drained and rinsed very well 1 can black beans - drained and rinsed very well 2 cans diced tomatoes 1 chopped onion 4 cloves garlic, chopped 4 oz. can diced green chiles, drained chili powder cumin powder dried oregano black pepper heaping tsp. beef buillon granules splash of coffee splash of beer I combined all beans and tomatoes (with liquid) in the crockpot. Added the onion and garlic and green chiles. Threw in some beef buillon granules for flavor, obviously if you want this vegetarian you would omit that and add some salt. The splashes of beer and coffee were because I like them in my normal chili, but it was only around a Tbs. of each as I did not want to add a ton of liquid. I added the spices by sight, but I probably started with around a couple of teaspoons of chili powder, one teasoon of cumin, half a teaspoon of oregano and pepper. I added a little more of each after about 3 hours of cooking since they get diluted. Taste and add to your preference. Partway through cooking I mashed the beans a few times to get a little body. I cooked for 5-6 hours on low plus about an hour on high with the lid propped open partway to reduce the liquid a bit. It sat overnight before we ate it and I garnished with cheese and green onions. (And I used a little bit of sour cream!!!!!!!!!!!)

I made split pea soup in the crock last night and am having it tonight. I think it will be pretty good but I think it got pretty thick.

Actually I use Black Butte Porter and cocoa powder in my regular chili. I forgot to add cocoa powder to the list but I also used a little in this chili, probably about 1 1/2 teaspoons. I used the bit of coffee to replicate the coffee notes in the beer and I have read a out people using coffee before. I didn't add a ton because I still wanted some brightness, but also some backbone.

Nice. I've used all sorts of beer (whatever is in the fridge) for chili. Never porter because that's one of my favorite styles of beer and probably wouldn't last long enough to make it to cooking. And I have heard of people using cocoa as well.
