For awhile now I have enjoyed finding music that is both melodic and uses unique time signatures (i.e. not 4/4). It gives a little twist to a song that may not get immediately noticed. It's also fun to watch indie rockers try to dance to a song in 5/4.
Many current bands enjoy playing around with their time signatures. Rush did a lot of it, as did Soundgarden, and more currently Animal Collective and Radiohead.
Here are a couple of my favorites:

It was definitely the obvious go-to, but I was surprised they hadn't been mentioned yet. Another obvious one is Mars Volta, but they seem to get a lot of hate on this board so maybe I'll keep them out of this.

i can't listen to fall of troy but my friend swears by it. screamo over math rock is impossible to listen to. but if you can get past, putting time signatures to it is ridiculous.
also, you know your younger brother is awesome when you come home for thanksgiving break and walk in to hear this on piano (yeah i know it's in 4/4 and everyone knows it):
