If you can't find crisp brown rice cereal (I couldn't last time) you can just use rice krispies. I used a generic last time. I also omitted the coconut since HG doesn't like it, and used some other nut besides pecans. I can't remember which. I also added some flax seeds and toasted them with the oats and nuts. And finally, I added dried cranberries and dried, chopped apricots. Oh and I have regular kosher salt, I think I just used a little, I don't really use very much salt usually. So, really, this is highly customizable and if you just stick to the base of oats and rice cereal, you can add any nut or fruit or whatever. I really like the addition of ground espresso. I made two batches last year and the jar of rice syrup was just about the right amount for both. One batch ended up having slightly less than a cup of it, and I kind of liked that one better. Most of this stuff can be found in the bulk aisle at the store so you can just get what you need and they are not very expensive to make.
1 tablespoon coconut oil (or regular butter) 1 cup pecans, chopped 1 cup slivered almonds 2/3 cup (unsweetened) shredded coconut 1 1/4 cups rolled oats 1 1/2 cups unsweetened crisp brown rice cereal 1 cup brown rice syrup 1/4 cup natural cane sugar 1/2 teaspoon fine-grain sea salt 2 tablespoons ground espresso beans 1 teaspoon pure vanilla extract
Preheat oven to 350 degrees. Grease a baking pan with the coconut oil. If you like thick power bars, opt for an 8 by 8-inch pan; for thinner bars, use a 9 by 13-inch pan.
On a rimmed baking sheet toast the pecans, almonds, and coconut for about 7 minutes, or until the coconut is deeply golden. Toss once or twice along the way. Mix the oats, toasted nuts, coconut, and the cereal, together in a large bowl and set aside.
Combine the rice syrup, sugar, salt, espresso, and vanilla in a small saucepan over medium heat and stir constantly as it comes to a boil and thickens just a bit, about 4 minutes. Pour the syrup over the oat mixture and stir until it is evenly incorporated.
Spread into the prepared pan and cool to room temperature before cutting into whatever size bars you desire.
Makes 16 to 24 bars. |

I made these last year again and I varied my chopped fruit by using a combo of dried cherries and cranberries and apricots. Still did not use coconut. I used peanuts and walnuts instead of pecans. I also could not find the brown rice cereal again so I just used generic rice crispies. I did not use coconut oil to grease the pan because I don't have it. I think I just used vegetable oil or butter or something.
Edited for Pro-Tip: When you are ready to press the bars into your pan, get your hands wet and this will prevent most of the stickage.

I think they would be great with some dark chocolate. They are really adaptable and that is one of my favorite things about them. I also love that they are not cloyingly sweet. Just a nice amount.

I can attest to Stormy's power bars. They were delightful. And the coffee was a ton of fun. She was so sweet and made a little extra so I could have some. I was so pumped to try them last year.
