I pretty much agree with what you're saying here, except that the songs Krug wrote on Apologies to the Queen Mary were quality stuff.

Ok I make a badass bruschetta.

Roast some red peppers on a grill. Grill them till their black and then pull them off and let them cool a bit. peel off the outter skin and then chop them up. Take some garlic cloves and toss them in some olive oil, salt and pepper. Put them in the oven and roast them until golden brown. Chop them up and add them into a bowl with the peppers. Dice some vine tomatos and add them into the bowl. Pour in a bit of extra virin olive oil into the bowl. Just enough to coat everything really well. Add some sea salt, fresh cracked pepper and fresh chopped basil. Let that sit in the fridge for a couple of hours or overnight. A good french baguette or toasted focaccia goes really well with it.

That's the simple version. If you want to kick it up a few notches make a balsamic glaze for it. Get a pot and put in a bunch of balsamic vinegar. Bring it to a low boil and then add some brown sugar to it. Add enough so it takes off the acidic edge to the vinegar. Then let it reduce until it becomes more viscous. Then take your bruschetta, add some crumbled feta cheese to it before serving. Then place it on your bread and then drizzle the glaze over it. Easier version of this is if there is a Superstore in your town, I've found that some of them actually carry a balsamic glaze in a little white bottle in the vinegar section. It's pretty decent.

I used to listen to the shit out of fun. when I was in high school. (Which was like 2 years ago). So random how they got famous.
