The gazpacho was super easy

1 English cucumber peeled with seeds removed
1 garlic clove roasted
1 jalapeño with seeds removed
1 cup low fat yogurt
Juice of 1 lemon
Lots of chopped fresh dill
Traditional gazpachos are thickened using breadcrumbs but I had a bag of crispy fried onion bits kicking around and used that instead.

Put all of that in a blender and add salt and white pepper to taste. Let it chill for a couple hours (i left it overnight). Toast up some croutons in butter with a little paprika and Bam Delicious!

I made an amazing Brunswick stew yesterday with ham hock, shredded chicken breast/thigh, onions, corn, lima beans, potatoes, and a full bottle of Sam Adams winter lager. I'm going to eat like a king for the next few days. Pics to follow!

It definitely isn't much to look at, but it's hearty and yummy and has tons of wiggle room for changes and improvements. I already have a few new ideas for the next time I make it.


Ingredients:
2 boneless, skinless chicken breasts, whole
3 boneless, skinless chicken thighs, whole
1 small smoked ham hock
1 medium yellow onion, peeled and chopped
3 cups chicken stock
2 tablespoons Wondra or all-porpoise flour
1 tablespoon sugar
1 12-ounce bottle lager
1 14-ounce can diced tomatoes with juice
3 ounces tomato paste (1/2 small can)
2 small baking potatoes, peeled and diced
1 cup frozen corn
1 cup frozen baby lima beans


Instructions:
- Set a slow cooker on high and place the chicken, ham hock and onions inside. In a medium bowl, whisk together the chicken stock, flour and sugar; pour the mixture into the slow cooker, then add the lager, tomatoes and tomato paste. Stir, cover and cook at least four hours or up to all day.
- An hour before serving, pull the ham hock out of the stew, mince any meat left on it (discarding the skin and bones) and add the meat back into the stew. Pull the chicken out and set aside to cool, then shred. Add the frozen corn, lima beans, potatoes and shredded chicken into the stew. Cover and continue cooking on high until the potatoes are tender; serve.

Wonderful! I hope you like it. The Sam Adams winter lager is very present in the taste, so I would recommend a lighter lager in case you are preparing it for people who might not enjoy that in their stew.

Pea, you inspired dinner tonight. I was trying to think of what to do with the rest of a cabbage that needs eating and I already have onion and garlic and tomatoes. I am having HG grab a carrot and some white beans and some tortellini and I am making tortellini soup. Not sure if I am going to use the beans yet, I am kind of a wing it type in the kitchen. I will try to take crappy cell phone pics.
