I can't eat that thing. I want to chew it like normal chocolate, but then it gets all stuck in my teeth.

I made enchiladas the other day and decided to try my hand at homemade enchilada sauce. It was really easy and turned out fabulously, if I do say so myself.

I had leftover Italian beef so I heated that up with a can of black beans, a can of diced green chiles, and some cumin, pepper, paprika, and a tiny bit of chili powder. The beef already had onions. I put some of that in a flour tortilla and topped with a mix of grated cheddar and pepper jack. Poured some sauce on the bottom of the pan, put in the enchiladas, covered with the rest of sauce, and then topped with a bit more cheese. SO GOOD. Even better the next day as leftovers.

I am sure you could make an even better sauce using high quality chili powder or making your own out of chilies. Also using fresh onion and garlic. But I had whatever normal chili powder I use ($4-5 at the store) and I did not feel like blending anything so I used garlic powder and dried onion. Made a roux with 2-3 Tbs. oil and 1-2 Tbs. flour. Whisked that around for about a minute and added 3-4 Tbs. chili powder. Whisked that around for another minute, added a heaping tsp. garlic powder, a big pinch of dried minced onion, and a few shakes of TJ's 21 Seasoning Salute (my crack). Oh, and a few shakes of oregano. Added an 8 oz. can of tomato sauce and 2 cups of chicken broth (used water and chicken base). Add 1/2 tsp. of sugar, bring to a boil, reduce to a low simmer for 20 minutes or so. I tasted at around 15 or 20 minutes and added a tiny bit more of each spice and a tiny bit of cayenne and simmered for another 10-15 minutes to let those flavors blend in.

Those look and sound delish. I've never done a roux with oil instead of butter. Does it work and taste as good for thickening?

Megatron made a lemon meringue pie with a gluten free coconut crust the other day. No pics because it didn't last long enough. J-Dawg she is requesting your key lime pie recipe so she can prepare herself for when we come visit.
